Mountain Dew and Dorito cupcakes!!! Strange but Delicious

-For this new year I want to be more adventurous and try new experiences. These cupcakes are an example of me straying from my comfort zone.

This recipe is inspired from my favorite youtuber Rosanna Pansino. Her food vlogs, Nerdy Nummies, are my favorite things to watch on my pass time. I’ve wanted to try this recipe ever since I saw her mountain dew and Dorito cupcake video. Mountain Dew Cake:

  • Lemon (moist) cake mix
  • 4 eggs
  • Lemon pudding mix
  • 1 1/4 cup mountain dew

Lemon Cream Cheese and Dorito frosting

  • 8 ounce (1 package) cream cheese soften
  • 1/4 butter
  • 2 tablespoons lemon juice
  • 2 teaspoons lemon zest
  • 1 teaspoon vanilla extract
  • 5 cups confectioner sugar
  • 1 cup crushed Doritos (For decoration)

Directions

Preheat the oven 350 degrees. Add the Lemon cake mix and lemon pudding mix together. Then add the wet ingredients to the batter. Stir the batter thoroughly but be careful to not over mix. Once the oven is heated then scoop the batter into the cupcake pan. You well know the cupcakes are done if they are golden brown and a toothpick comes out clean.

For the icing:

Beat the cream cheese, lemon juice, lemon zest, and vanilla extract until creamy. Add the confectioner sugar 2 cups at a time until the desired constancy. Then spread the frosting on cupcakes and decorate.
